Basic Rolls (Orange Rolls, Cinnamon Rolls)

Ingredients:
6 eggs, beaten
1 C. sugar
1 C. oil
2 tsp. salt
2 C. hot tap water
10-12 C. flour
2 T. dry yeast dissolved in ½ C. very warm water

Instructions:
Dissolve yeast in water and let sit and proof for about 20 minutes before you start making the dough. It should raise and be foamy. Beat eggs, sugar, oil, salt and water in mixer. Add about half of the flour and the yeast mixture. Add remaining flour. Dough will be very soft. Knead for 2 minutes. Let raise in a large bowl for 1 ½ to 3 hours. Punch down and refrigerate over night or for a few hours. Form rolls and let raise 2-4 hours. Bake at 400 degrees. Bake rolls for 5-7 minutes until golden brown. Bake sweet rolls for about 10 minutes.

This dough is good for sweet rolls, pizza, bread sticks or rolls.

Orange rolls: 1 stick butter, the zest of 1 orange and sugar to make a thick paste.

Sweet rolls: sugar and cinnamon, mixed together.
